Delicious Indian Pav Bhaji Recipe

This recipe is straight from the streets of Mumbai. With a few personal tweaks, we have made a recipe that not only tastes amazing but also satisfies all your nutritional needs. The best part about this recipe is that kids will not even think twice and eat this in a heartbeat. Little do they know, it has all your daily essential vegetables and greens and smashed into one power packed delicious meal.

Below recipes serves 4. Cooking time 40 mins

Ingredients:

  • 2 medium potatoes
  • 2 medium onions
  • 1 cup peas
  • 1 cup beans
  • 1 carrot
  • 2 tomatoes
  • 1 whole green bellpepper
  • 2 pods garlic
  • 1 teaspoon mustard seeds
  • 1 Lemon
  • Coriander leaves for garnishing
  • 1 spoon Butter
  • Salt to taste
  • Pav bhaji masala (Available at any Asian store near you)

Directions:

  1. Wash all vegetables and peel the potatoes
  2. Cook all vegetables (except onions and tomatoes) for 20 mins until soft and mushy
  3. Drain the water and keep aside for broth
  4. Smash the vegetables with a spoon until they become a Mash. Keep aside
  5. In a separate skillet, heat oil for 2 mins at medium flame
  6. Add mustard seeds and cook until they pop
  7. Add garlic and onions to this mix and saute until golden brown
  8. Add tomatoes and cook for 2 mins
  9. Add the mash from Step 2 to the mix
  10. Sprinkle Pav Bhaji masala until the mix turns brown
  11. Add the broth, let it cook for 20 mins
  12. Squeeze lemon, add a spoon of butter, add salt to taste
  13. Garnish with Coriander and serve hot!
  14. Eat this dish with any form of Bread
